The very best Bran Muffin ever! If you want to add fiber to your diet, this is the recipe for you. Muffins are just the perfect take anywhere food. This recipe includes ground flax seed and bran cereal. 2 grams of fiber in each muffin!
Fast and easy mixing. You will have a healthy Bran Muffin snack right out of the oven in no time at all. Everyone in the family can use a little more fiber in their diet. This is my exclusive Bran Muffin recipe and the best I have ever baked.
Of, course, the best way to eat them is fresh and warm out of the oven. Better double the recipe, these BranMuffins will disappear fast. Great for freezing, too.
Healthy Fiber Rich Bran Muffins
Preheat oven to 350 degrees using a dark non-stick pan. Bake 20 minutes.
Line a 12 count cupcake tin with paper liners.
Put together in a bowl:
1 ½ cups buttermilk
2 cups raisin bran cereal smashed
While the cereal mixture is softening, in another bowl whisk dry ingredients together and set aside.
1 ½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1/3 cup dark brown sugar
Add to buttermilk mixture and mix well:
1/3 cup vegetable oil
Now stir in the dry mixture.
Fill 12 cupcake liners.
Bake 20 Minutes. Take out immediately and let cool on a wire rack.
Easy peasy! You can add more yummy ingredients to this recipe if you wish or add 1 more tablespoon of ground fax seed to kick up the fiber even more.
Here are some suggestions. Add one more or all if you like!
1/4 cup of chopped nuts
1/4 cup of chopped peeled apples
1/4 cup of golden raisins
And if your sweet tooth wants just a little more sugar make a quick icing by mixing 1 tablespoon melted butter with powdered sugar until of the right consistency to drizzle over your Bran Muffins.
